How to make Bagels.

 




Bagels - Bagels are one of those things that we think are pretty hard to make, or that they can only be bought at your local bakery, café , or grocery store. But the truth is, you can make these delicious treats at home too! With this easy to follow recipe, your bagels will turn out perfect!

Ingredients :


Here is what you'll need!


Bagels

Servings : 4 large bagels or 6 regular sized bagels


- 240g (1 cup) Bread Flour or All-Purpose Flour

- 20g (1 ½ tablespoons) Granulated Sugar

- 2g (½ teaspoon) Yeast

- 4g (1 teaspoon) Salt

-140g(¾ cup) Lukewarm Water (40°C or 104°F)

- 7g (½ tbsp.) Oil (Optional)

- Water to boil the bagels + 1 teaspoon sugar


PLEASE NOTE: Although I am also providing cup measurements, I encourage you to use a scale if you can and use the grams measurement. Doing this will provide the bagels with more flavor and a better finish.


Preparation :

- Preheat oven to 220 °C /430°F


Instructions (With and Without Stand Mixer) :


Without Stand Mixer(Easy kneading technique)

  1. 1. Mix together flour, sugar, and salt in a medium mixing bowl.

  2. 2. In a separate bowl, add the yeast to the lukewarm water, mix, and set aside for 5 minutes.

  3. 3. Pour the yeast mixture into the flour mixture and fold until just combined/the dough is together, but there is still a little flour that is sticking to the bowl.

  4. 4. Dump the bowl onto a large work surface or a cutting board, and knead the dough by hand in this motion:

Stretch the dough outwards by using the palm of your hand, fold it back, turn the dough 90°, and repeat until the dough has a smooth texture.(If you feel the dough is rough and starts to tear, cover it with plastic wrap and let it rest for 15 minutes in a nice area, and knead until smooth).

  1. 5. Optional, but recommended- Add the oil to the dough and continue kneading in the same manner until the dough is soft and supple.

  2. 6. Take the dough, and tuck the corners of the dough into the bottom until you form a ball of dough. In a medium sized bowl, brush lightly with a bit of oil (about 1 tsp), and put the dough ball into the bowl and cover with plastic wrap. Let it rest for 30 minutes.

  3. 7. Separate the dough with a bread cutter or knife into 6 equal sized pieces.

  4. 8. Form each of the little pieces into a small ball by tucking in the corners of the dough into the bottom until it forms into a ball.

  5. 9. Put them on a baking sheet or cutting board, cover them with plastic wrap, and let them rest for 20 minutes.

  6. 10. Form into bagel shape as shown in video.

  7. 11. Put them on a baking sheet or cutting board, cover them with plastic wrap, and let them rest for 30 minutes.

  8. 12. After the bagels have rested, boil a big pot of water, and add about 1 tsp of sugar. Boil the bagels for 20 seconds on each side.

  9. 13. Take them out and put them on a baking sheet lined with parchment paper. Brush the bagels with 1 beaten egg, and add toppings(optional). Bake at 220 °C or 430°F for about 15-18 minutes or until the bagels are golden brown.

  10. 14. Let cool and Enjoy!

With stand mixer & dough kneader attachment(Minimal kneading by hand).

  3. 3. Pour the yeast mixture into the flour mixture and use the dough kneader attachment in the stand mixer and knead it on low speed for 3 minutes until everything is combined, and then knead it on medium speed for 15 minutes or until the dough is smooth.

  4. 4. Optional, but recommended- Add the oil to the dough and continue kneading in the same manner until the dough is soft and supple. Kneading pattern : Stretch the dough outwards by using the palm of your hand, fold it back, turn the dough 90°, and repeat.
